How do I brown the beef cubes without hurting myself?

The instructions said to heat oil in a pan, then to put the cubes in, then flip them on each side so theyre evenly browned. The last time I made stew (I just learned) I put in the cubes when the oil was hot and i got burned, and when i tried to flip them omg ow.
